Kare Kare for Christmas

My Wife’s Favorite

 karekare Last christmas, I just prepared a dinner for a small salo-salo in our Villa here in UAE.  It is my wife’s favorite, Kare-kare.  Usually cow’s “tuwalya” is commonly used in Karekare, but for me, I prefer Pork legs or “pata”.  I bought 1 1/2 kilo of “pata”, eggplant, pechay, peanut butter, Mama Sita’s karekare mix and of course Kamayan Spicy bagoong.

    First, I let the pata boiled in medium heat until meat was tender.  Water is just enough to cover the meat.  Then I pour in the eggplat, karekare mix, tbspn of peanut butter and salt. 

  Once soup thickens and eggplant is cooked, add pechay and cooked for 2 minutes. Served with bagoong and enjoyed our Christmas Dinner.

    She really must have liked it! Looks tempting, but it will look good if you have a photo of the Spicy bagoong!
